Shizengo brewery was established in 1865 in the very southern foothills of Fukushima Prefecture. Brewer Kouta Ooki-san values sustainability in their sake production, and planted their own biodynamic rice fields. Only wild yeast and the yamahai method of creating the shubo is used.
This was a very traditional brewery, but due to significant damage from 2011 Fukushima earthquake, the brewery was rebuilt in a modern fashion. The family utilized old timber and wood to add artistic elements to the design, and to pay homage to the brewery’s history. The Ooki Daikichi brand translates to "Many Great Fortunes".
