Inoue Seikichi, established in 1863 in Utsunomiya Tochigi, makers of Sawahime brand sake. Toji Hiroshi Inoue-san believes in all things local and produces sake with a distinct Kire, a clean finish due to drying his kojimai to 8% before fermentation.
